Winemaker: Simon Busser is a winemaker who has worked under Olivier Cousin, a man who has done so much for natural wine in general, teaching us to be accepting that wine is an ensemble of things and not always perfect. Busser himself uses a horse to plough the vines, and has taken over a small family plot of vines.
