Directly pressed, indigenous yeast fermentation (2/3 in older barrels, 1/3 in tank). Aged for 12 months, minimal sulfur, added only at bottling. We love the Aligote its super lean, taught and textured, with lemony notes, its serious and grown up. Try with a lovely piece of Dover sole or seasonal shellfish.
Producer: Sylvain Pataille, a man who started from scratch, with no family vineyards of his own, unusual for Burgundy. As an oenologist you would expect the winemaking to be tip top and it is but there are risks taken.
