Chateau Chalon is something special, for those of you who love top notch sherry this is a must, 2013 is the current release and all Chateau Chalon must be aged for a minimum of 6+ years. Chaeteau Chalon is aged under voile (a veil of yeast), much like a fino. The wines have more bite and are a treat with a slab of aged Manchego.
