El Tresillo is one of those memorable bottles that reminds us why sherry should never go out of fashion. Hidalgo select grapes of the highest quality but the Terroir happens in the cellar, the right climatic conditions, and their soleras contain more criaderas which makes for a more complex sherry. El Tresillo is a coup de coeur for us, with around 15 years of ageing, first as a fino then oxidatively to make an Amontillado, Just gorgeous!
