Ottavio Rube Bianco 2021 Valle Unite Piemonte Italy

Quite possibly one of the best cave co-ops around and Italy’s only natural wine co-op. Valle Unite is very much an agricultural project farming 100Ha in total. Winemaking is hands off, low intervention with tiny amounts of sulphur and wild fermentation. It suffices to say the Ottavio Rube bianco is mineral, energetic and refreshing - a great toe in to natural wine.
