It's iconic frizzante made with the local Vespaiola, sourced from different plots up to fifty years old. Mostly direct pressed, a small quantity sits on skins for twenty four hours. Aged for six months in stainless steel before being transferred to bottle with a little must for the second fermentation. Herbaceus and mineral, the resulting bubbles are extremely fine, one of the most precise col fondo we have ever tasted.
